Our Christmas Cake is my mothers recipe and won a 2 Star Great Taste Award.

It is a festive, rich fruit cake brimming with sultanas and glacé cherries, all soaked in Irish whiskey for a deeply aromatic flavour. Brown sugar, Tipperary butter and fresh eggs lend a moist, tender crumb, while the almonds add a delightful texture. Mixed candied peel and a hint of cinnamon and mixed spice bring warmth and complexity to each bite. Topped with almond icing and finished with a layer of smooth fondant icing, this cake is the perfect centrepiece for your Christmas celebrations.

Ingredients:

Sultanas, brown sugar, unsalted butter, plain flour, eggs, blanched almonds, whiskey , glacé cherries, mixed candied peel, cinnamon, mixed spice, icing sugar, glucose syrup, sugar, almonds.
